Either gedit or a ReMarkable... Definitely not the ones you mentioned ;)

Simplenote because it's synced across all devices and allows me to publish a note like a small web page online thanks to markdown formatting.

BeaverNotes has been pretty nice lately @Tutanota but it's not the primary note taking app, I like having Logseq , Workflowy and Craft... but Dropbox Paper is really nice too!

I've been using #logseq for the past year. It's an awesome open-source combination of outliner/block-based notetaking mixed with electron-based feature-rich Zettlekasten's like Obsidian or Foam, and is similarly file based meaning low lock-in risks and easy integration with other tools. It also has a lot of cool features like Datalog integration, pdf & video tools, a nice mobile app, and lots of great opinionated defaults. I've been only using md, but it also supports org formatting.

currently I use @joplinapp on Joplin Cloud but also had it sync with nextcloud for a few years

After what happened with Skiff mail, I mainly trust my notes to Trilium. I can build my notes offline and back them up myself.

For online notes, I pay for and enjoy Zoho notes. Zoho has a great web clipper, is multi-platform and has been around for many years.

So far primarily using close sourced #CintaNotes which also runs with Wine.

I use anytype and its awesome! Servers based in switzerland as of now.

I simply use Google Docs or Dropbox Paper for notes.
