Mastodon 3.5 has editing already implemented, but disabled for now. As I understand it, It's not fully backward compatible so they are waiting to Mastodon 3.5 to spread to more instances.

I see, thanks! I noticed the "delete and re-draft" function, but I feel like deleting to edit is a bit like throwing the baby out with the bathwater.
