Very few things are more satisfying than slicing a whole ripe pineapple with a Chinese cleaver, then eating the cubes or slices in dark sticky soy sauce with birds’ eye chillies. Maybe some belacan.
The tastiest pineapple I ever had, and it was probably completely contextual, was at a rest stop while taking the bus to Zacatecas. There was a fruit stand and I got pineapple chunks with chamoy, chile, and lime. My GOD that was good. Bus dehydration, hunger, etc. - but it was incredible.
