I would say customizability, speed and open choices for hardware.
Two specifics:
1. on GNOME, I can scroll in different directions with the touchpad and mice, on MacOS, I can't. 2. I don't have any input lag after switching desktops on GNOME, whereas macos takes a second to "activate" the new desktop before it takes keypresses
