This particular song has no refrain, so between the verses you have an instrumental… thing, let's call it a bridge. In the bridge you have one bar of 6/8, then one bar of 7/8, then one bar of 5/8.
And all of that doesn't sound like a mess, it's still beautiful and harmonious.
