I recently need to work with online excel sheets. I don't like the excel in browser but there is nice workaround how to open standard desktop excel: Press windows+r, and in the run dialog type "excel url", for example "excel https://something-.sharepoint.com/:" It works if you have access to download the document and copy the content. If permissions are very restricted it doesn't work.
