So this is one of the coolest things about Fedora Silverblue (apart from the excellent stability, speed, and gorgeous stock GNOME 42): the first entry you see is today’s operating system. The second one is yesterday’s. If I wanted to, I could revert to the latter with a single command.

Agree. In fact, with a few of the most important “tweaks” transferred to the default Settings app, most folks wouldn’t even need Tweaks. My main use case is changing the Monospace font (which should be an option in GNOME Console). I think I also set the top bar to show the week day (minor; could be a default setting).
