Have certain folders you always want quick access to in macOS? Add them to the Finder sidebar so they always appear under the "Favorites" section, as well as the "Where" popup menu in open and save dialogs, by selecting them in Finder and choosing File > Add to sidebar (or pressing Command-Control-T). By default, some categories of iCloud data, like login credentials and health information, are end-to-end encrypted, while others, like backups, photos, and iCloud Drive files, aren't.
