Ok, real important question:
Which one is better and why?

Better means better for me, right? πŸ™‚ Because you might have totally different criteria.

Relevant for me:

1. Software must be in #Debian β€” or it does not exist. Debian has at least one Matrix server and multiple clients. But no Deltachat server or clients so far.

2. I use #Jabber​/​#XMPP for chat. For Matrix, I use a bridge (#slidge git.sr.ht/~nicoco/slidge). For Deltachat, no such bridge exists, AFAIK.

Debian has several DeltaChat servers: At least Dovecot, Courier and Cyrus.

Sure, it's email, so I can use most MTAs and MUAs.
But they recommend to use a special "chatmail" server (and also specialised clients).
I agree with them: My own experience with Deltachat on my own, ordinary email account was not very good.

Not a @delta dev but I'm sure their order of preference, from best to worst, would be:
1. Use your own server
2. Use a chatmail server
3. Use any other server

Chatmail is better because it makes creating an account seamless, and protects itself from spam. Your own server is even better because on top of that, you actually control your stuff. Chatmail is really "postfix + dovecot + a few scripts to make the deployment usable by billions of people", but if you self-host it's perfect.

Chatmail is also better because there are no limits. You don't have limits with your own server, and some commercial services have limits you will never reach, and that's perfectly fine.

The goal is not that every user uses chatmail, or chatmail "wins"; the perfect world is one where your mail provider whatever the software doesn't have stupid limits. The best way to push is for @delta to show how it could be done

I didn't know, that chatmail is just postfix + dovecot. Good! Not reinventing the wheel…

If I had more time at hand, I would try to create a #slidge based bridge for Deltachat.

But I would not even know how to name it. Delidge?

That would be a slapp in the face of the "Use Boring Names" Convention of '22!
